Still trying to decide what dessert to make for Thanksgiving, since it is right around the corner? Don't hit the panic button just yet. I have made it simple for you this year! This recipe is one of my favorites (and everyone else's too!!)
Yes cheesecake's are known for being a lot of work, but they are actually one of my favorite things to bake. This recipe doesn't take as much time as some do, and BOY is it amazing!!!
S'mores Cheesecake Ingredients: 2 C. graham cracker crumbs
3 Eggs 1/3 C. butter, melted
3 C. Mini Marshmallows, divided 3 Packages, Philadelphia Cream Cheese, softened at room temperature
2 tsp. Milk 3/4 C. white sugar
2 Tbsp. Ghirardelli 60% Bittersweet Chocolate Baking Chips
Directions: 1. Heat oven to 350 degrees F (175 degrees C). 2. Mix graham crumbs and butter; press onto bottom and 1-1/2 inches up side of 9-inch springform pan. 3. Beat cream cheese and sugar in large bowl with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended; pour into crust. 4. Bake 40 to 45 minutes or until center is almost set. Run knife around rim of pan to loosen cake. Refrigerate cheesecake 4 hours. 5. Heat broiler. Microwave 1 cup marshmallows and milk in microwaveable bowl on HIGH 1 minute or until marshmallows are completely melted and mixture is well blended, stirring every 30 seconds. Spread onto cheesecake. Top with remaining marshmallows; broil, 6 inches from heat, 1 minute or until golden brown. (This part can sneak up on you! Watch the entire time) Cool 10 minutes before removing rim of pan. Garnish with chocolate chips.
6. I melt extra chips and drizzle on top of marshmallow topping for not only added chocolate, but I love adding to the presentation of this cheesecake! Tips: 1. Before I start, I place foil around the springform pan.
2. I place an oven safe bowl with water in it, in the oven on rack under cheesecake. This will help prevent extreme cracking.
